Does it makes sense to buy wireless handset to run off the existing classroom Wi-Fi on a PBX IP phone system. They will have wired IP Phones for the offices, but do not want to re-cable classrooms and want to use existing Wi-Fi for voice? How reliable will it be?

Quite possibly it will be completely reliable. Unfortunately, there is no way we can guess about the degree of reliability from anywhere but on site.

Voice-over-IP can forgive various reliability problems much more than digital data.

Your thoughts may be good for that what scenario you have described. If the management do not want to re-cabling again, you can try for the same. It is better to ask a good vendor/manufacturer for hardware part.
