I never want my Windows 10 laptop go to to sleep. I have all of the settings set to "off" but just after a few minutes, it goes right to sleep. Are there specific logs that I can look into to figure this out? What else can I do?

You said, you have set all of the settings to Óff'. Have you checked additional power settings? Please just take a look and check all the settings are OK. Click Settings > System option. Click "Power and Sleep" from the list of options. Make sure that the options under "Sleep" are set to a desired value. Next click "Additional Power Settings" under "Related Settings." Again click "Change Plan settings". Then click "Change advanced power settings". Moreover, on the Power Options window, expand each setting to make sure nothing is preventing the system from going to sleep. Once done, click "Apply" to save settings.

Is it going to sleep when running off the battery or when plugged in or both? It should be a simple power setting you might need to tweak. If it only happens when on battery power, you may have a defective battery. I have an older laptop that only holds a charge for about 20 minutes and will shut down to protect the system when it reaches a critical level.

Please check here a good article, from HP: https://support.hp.com/us-en/document/c03383935

Though this is based on HP systems, but the concept & knowledge can be helpful for any make/model or manufacturer.
