Why use Inter-VLAN routing?

Doesn't it defeat the purpose of having VLAN in the first place (segments of the network isolated), with Inter-VLAN routing we will be able to access devices in a different VLAN.

Welcome to ITKE, antropitecus! VLANs divide one physical network into multiple broadcase domains. But here’s why you need interVLANs. Since VLAN switches can’t forward traffic along VLAN boundaries, you need to have some sort of routing between those. That’s where it comes in.
