    1.   .eps- represents encapsulated post script .It is used when there is a need to embed an image or graphic content which is generally raster in nature to import/export to other editable file format.

    2.    .ai- it represents adobe illustrator artwork. It is generally used in vector graphics and is a native file format of AI.

    3.   .pdf- It represents portable document format. It is independent of any hardware, software or application used to present documents which include image, text or other information. pdf is now a days used as a better exchange file format for designing of graphics.hence it has taken the place of .eps ehich is used in some specific purposes.

    When do I use...

Use? What do you mean by "use"? Are you generating documents or deciding which ones to access?

What software products or tools do you have?

I typed your question into a Google search box and got a varied results list. Have you done any research on your question? Was there a problem with any results? If there was no problem, it's not clear what kind of answer should be given.

Each format is created by it's own program. It all comes down to what are you looking to create and what program will best suit your need for the final output. What do you wish to create?
