Setting a separate domain on a virtual machine

Hi Everyone, I'm new to the IT world and I'm trying to see if it is possible to set a a completely separate domain on a virtual machine even though I have an existing domain on the physical machine that I want to keep separate. So I have a current server running Windows Server 2008 r2 we are using already setup called az.local. I want to use Hyper-V to setup a new separate server called nm.local that can't be accessed by anyone on the az.local domain. Can I do that? Any and all help will be greatly appreciated. Thanks for your time.
