simply using Microsoft Word 2013. When I have a document open, and select a certain amount of text, the auto highlighting is grey, and I need something that is more contrasting with the text and my screens. How can I change the color of the highlighting when I select text?

Use the highlighting tool in the font area of the tool bar. Select the text, then click the down arrow next to it and click another color.

If I understand correctly, the OP mentioned the word "highlighting", but he/she was actually referring to the colors used to mark text as selected.

Would it be a "themes" option? I don't use Windows nor Word much now, but there have been such things available in Windows. I wouldn't think it was specific to "Word" though.

If you apply font size on selected word then you can use font size tag.
