I currently have a NVIDIA GeForce GT705 graphics card in my computer. I have bought a new screen capable of 1440 x 2560 resolution. But I can't set my res any higher than 1920×1080. Their website suggested it can show 2560 x 1600 - whats the issue here? do I just need to update the driver?

Hard to say with no info provided about the system/environment. The 705 is an OEM model and it was entry-level when introduced maybe 5 years ago. Now it's often better to use whatever integrated graphics is in the system unless the system is more than a couple years old.

It's not likely that much newer drivers are available, but it's worth trying.

Yes, update may help to resolve this issue. Have you contacted their support portal/ customer care? Link their website and minutely check, if there is any troubleshoot related FAQ there.

Also check NVIDIA Control Panel, if available. Within the NVIDIA Control Panel, under Display > Change Resolution. There is a checkbox that indicates "Show only TV Resolutions" & this is checked by default. You can uncheck and see if that is helpful.

What make and model monitor? Not all of them can support all resolutions. Is this a 4K HD monitor or an older model? Just asking because of the older video card being used.
