What are you looking to create with the PDF information? There are numerous of website with sample code to extract that info into things like a TXT document. You can find examples in Python,C#,VB.  What language(s) if any are you familiar with ? A lot depends on what the PDF contains. I mages may cause you some headaches. Provide more details and we can provide a better answer.

Yes, it is possible. You can export already feed data through your program to a PDF file. But without knowing your knowledge in software programming/ language it may not easy to tell you something fruitful. Today almost all modern programming languages can do the same job, Generally by using Java/ VB/net/ C# can do the same. But more information is needed. What did you want to achieve? Is this your company related/ a personal project?

A general concept in programming goes something like this:

A computer can do anything that you can figure out how to tell it to do.

So, the basic answer is "Yes, as long as you can figure out how to tell it to do it."

Language is mostly irrelevant. There might be a hundred or more languages that could work fine if you're fluent in them. The most important criterion relies on "What languages are you good with?" The choice has to start with that list.
