Outlook and Exchange mailbox owner change

We have a bunch of use using Outlook 2007 and when we have a new employee and instead of creating a new mailbox for this new employee we transfer the mailbox from the old employee to the new one when someone try to send an email to the new employee the outlook still has the old employee record in the autofill and although the email address is right the email doesn't get through it comes out as recipient not found. On the Exchange Server (2010) the right user is assigned to the right mailbox but Outlook keeps trying to send to the old user that does not exist instead of sending to the right email address.
