Whenever I launch Microsoft Word 2016 on my Windows 7 machine, it crashes immediately. The only message I get is this: Microsoft Word has stopped working. I already tried uninstalling / reinstalling Office 2016 but that didn't work. It's able to start in Safe Mode if that helps. What's going on here?

Try running the Word repair tool option.

Have you try to open Excel 2016, is that same thing happened?

Reboot the system in safe mode and try run Word 2016 and check if that helps. If it is OK, probably one or more programs is/are conflicting with MS Word.

Or in Normal mode, try to run MS Word as, windword.exe/a from search bar, it prevents Word from loading its add ins. If it asks, Want to open Word in safe mode. click on Yes.

One more thing, keep in mind that, try to update your system and check for Windows Update. If available, go for update and check all the necessary updates including optional updates are completely OK. Now restart the system and check if it helps you.

Is this a new installation or has it work in the past? It looks like you have the minimum OS, what is your current memory? you need at least 2 gig.

If all MS Office 2016 application are crashed during startup (for example Word/Excel/PowerPoint etc.), then you can check for viruses that can be a cause for the same issue. If already an anti virus is installed, you can update this antivirus first, then go for scan/clean. Or you can download/install a free virus cleaner like MWAV. In that case you can boot the system in safe mode, and run MWAV & make sure that, this is not happened by virus activities.
