So I'm sure this is a pretty easy Microsoft Excel question for you experts but I'm still a newbie. I'm trying to convert my values into months (or text). So basically, I want 1 to show up as January. But there are more values than 12 so those can be left blank. How do I do this?

Type this formula like =TEXT(DATE(2000,<cell no>,1),"mmmm", while cell no represents that where did you want to show. Now to convert for 12 months, just drag/copy the formula and then fill handle of the formula cell to fill the range. Before write 1,2,3,4.....up to 12.
