This is not an easy task, my friend but it is not the most difficult either. The good news is that Microsoft Windows and Exchange Server are fairly intuitive once you understand some basics. I recommend reviewing the Microsoft TechNet content on planning and designing, also deploying W2K3 and E2K3. There are a lot of things to take into consideration.

Before you even think about Exchange, make sure you are comfortable with setting up an Active Directory forest (if AD does not already exist) and DNS. See if your boss is willing to send you to training for two weeks (not necessarily consecutive) but you will need a week for each subject.

Make your life 100 times easier and push him to purchase Windows 2003 Small Business Server. It makes installation a lot easier and has wizards for everything. My junior admin just did an install and it was super easy, The only down side is you can not join an existing domain and this server needs to be your domain controller.
