How can GDPR Right to Forget article apply in reality?

Does anyone know what GDPR says about applying the right to forget article of GDPR for companies needing to keep employee records after the person has left an organization. For example if a person leaves the organization and he asks for all his personal records to be forgotten, should companies actually delete all of his records from their systems? How about payroll or health related data which for compliance need to be kept for several years? Appreciate comments.
