What is the printer model? Is the printer configured to print color or only black/white?

That does depend model to model. If you remove color cartridge, might be it won't work. Just insert it even it is empty, but b/w is ok then it will work. However, some model works without color cartridge, but as your case, probably it does not support.

What model printer? You might just be able to leave the empty color cartridge in. My HP model has 1 black and 5 color. Even if a color runs out my printer will print. It just needs all the cartridges installed.
The printer scans a bar code on the cartridge and will even give warnings if the date has expired. That may be their way of users not being able to refill them.

This issue varies from model to model, but almost all models require that there is a cartridge in the slot even if it is empty because it verifies that there is one there. You might be able to tell the printer through printer properties to print black only, but I do not think that it will let you print with the slots empty.
