I'm the administrator for several computers in our department. Basically, I'm able to access those computers through our LAN. Here's my question: Would my coworker find out if I connected to their PC? Can they see it in Event Viewer? All of these computers are on Windows 10.

Generally speaking, the answer is yes. It all depends on how you connect but most connections generate events and logs. I have found that the best way to connect to a computer without anyone knowing it (unless they are looking at network-level traffic) is to exploit a vulnerability on a system using a tool such as Metasploit. Those connections often (or can be made to) fly under the radar.

Yes, there must be a notification which is generated by OS by default. If understood correct, if you want, you can prevent all of these (like notification/event viewer etc.) by using group policy object, which is basically a collection of settings, which can help to enhance administrator's job.
