Date fields in .JPG files

How many dates are kept internally in a JPG file, one, two, more? I am pretty sure creation date is kept but it is updated when the file is updated by image processing software like Photoshop or Lightroom? Or is the initial creation date kept in one field and the updated date is kept separate? Finally, what utilities or programs can I use to read all date fields in a JPG?

Right click the file and select properties. Then select the details tab.. There is a lot of information here.

    As far as I know it includes just the creation date.

    I can't confirm, but I don't think the creation date is altered by any photo editing application unless it has a specific option to modify exif settings intentionally.

    Those programs do cause a change in the modification date at the OS level, but most likely not in the exif data.

    There are several programs that allow you to modify exit data.

    I remember ExifTool and jhead, but there should be more, with different features and complexity levels.
