Would I be able to copy all of my old emails that are stored in Outlook 2010 via a POP account onto a new IMAP account that I have setup to replace the old account? If so, what's the process to do that? Thanks so much.

There shouldn't be a need to create a new account. Just change the existing account from POP to IMAP. As long as e-mail items exist in the account on the server, they'll still be accessible via IMAP. (This can be very dependent on whether it's POP or POP3. and some previous retention configuration details.)

I use Thunderbird, but suspect that Outlook 2010 would work similar. I can right-click an e-mail item in one account and select either 'Copy to' or 'Move to' a different account as long as the target is IMAP. Drag/drop of selected items also works for me. Source location can also be a local e-mail folder.
