Outlook calendar invite marked as ‘private’

Hi, I sent a disgruntled employee an Outlook calendar invite to a performance improvement meeting.  I marked the invite as private and I believe they received it as private and later unchecked the privacy tag on the invite in their calendar.  They have since raised holy hell saying they are unable to complete their performance review because of the humiliation caused by this invite being visible in their calendar.  I believe the person unchecked the 'privacy' tag themselves and was wondering if there is a way to prove this.
