While I don't have a deployment as large as thousands of users, I have yet to encounter any problems virtualizing exchange or SQL in small to mid size deployments. Currently I have about 350 users deployed on Exchange on an infrastructure with a 12:1 consolidation ratio consisting of nearly the entire enterprise without issues. And given the flexibility of the platform, I could still easily add clustering on top of virtualization to gain the best of both worlds. Having done that previously with SQL, I can say it is a great combination.
