This is the workflow book I would recommend

It still doesn’t give you the ‘under the hood’ exposure that I was talking about but it is a good place to start.

The best way to learn Workflow is to get real world experience. There is a good tutorial in the SAP Help (help.sap.com) which is a good place to start. Of course formal SAP training is also a good place to start. But there is no substitute for real world experience.
