Answer Wiki:
Server OSes are built to stay up for as long as possible, and Server 2003 is no exception. More often than not the application hosted on a Server 2003 operating system will be the one that need requires a restart. It is recommended to apply Service Packs and security updates when you can, but generally Server 2003 will not need to be rebooted for any other reasons. But being microsoft, you can count on rebooting at least once a month, if not more, so plan for that during the design phase itself.
