Exchange 2007 is not supported in Windows Server 2008 R2 but you may be able to use 3rd party software to do things like backup etc.

Currently Exchange 2007 is not supported on Windows 2008 R2. You’ll have to wait for a patch before you can install. You’ll want to use Windows 2008 for your Exchange 2007 deployments.
