What’s the easiest way to seralize and store data using C#?

I'm trying to find the easiest solution to serialize and store objects that will contain configuration, application state and more data. There's not a ton of data and speed isn't an issue. I would like it to be in-process and have it to be more easy-to-edit in a texteditor than XML. I know .NET can't handle in-process and I don't want to use the data JavaScript. I'm leaning towards JSON (even though it uses JavaScript) but I'm looking for other options too. Thanks!
