 What are the pros and cons of a dedicated server compared to a cloud system like what Amazon offers with S3 and EC2?
So far I understand that Amazon can be very easily scaled up and you’re likely going to have more uptime considering it’s a very large corporation that cares more about uptime. But what if I have a problem scaling up and I find a very good hosting business that is always up? Are there other things I should consider while deciding?

With a dedicated server your costs are fixed, as are your resources. With Amazon's EC2 your capacity to grow is massive, however if you grow massively because of bad code then you'll get a hell of a bill. Honestly most companies don't need the ability to scale to a massive level.
