If you’re trying to use Exchange to manage mobile devices, here is a good chart that lists all the EAS attributes that can be checked or set for each mobile OS:

If you’re trying to use native device management APIs to manage your devices, here is a good reference link for configurable iOS attributes (set via configuration profiles):
