You can add a color label to the calendar text. Follow these steps:
1.Click the calendar button for Outlook 2003.
2. Click on Edit menu, select Label, and then chose Edit lables.
3.Edit the label text as required.
If you want to assign a label, create an appointment. From the Untitled-Appointment dialog, click the label drop-down arrow. Choose the desired label from the list. You can also, right click on a calendar item and choose the label from the menu.

It is possible by using color categories. By default CC may be shown but don’t worry, u may create new CC for ur own & assign it. To create own, click all categories to open CC box then assign a color category from the CC dialog box. Remember, must select the check box next to the color category. And if this is not so comfortable, follow very simple step: to assign for an appont….. right click on calendar the appont …., & point to categorize button image, and then click a color category. For an open appont…. under appointment tab > options group > categorize button image > click color category.
