Please advise. We have a branch office with a Cisco 3560 48/port POE switch. The branch office has 20 users in VLAN 1. The switch interfaces with a Cisco 2811 router. The router has a T1 point to point to our main office. We are putting in VOIP so each user has a phone -> PC. How would I configure the switch and router?

you are going to need an IP PBX to get voip. Then you can have the LAN connection to each workstation go into the voip unit and then from there into the computer. If you want, you could create a separate VLAN for voip traffic only, but that is entirely up to you, of course.

To cover some of the basics, look at the following:
1) decide how youre going to power your phones – either POE or power-bricks
2) Setting up seperate VLANs for your voice / Data
3) Implement VLAN trunking from the switch to the router
4) Decide where your DHCP / TFTP / Call processing is going to take place
5) ensure your TFTP Server (actual server or your router) has the necessary config files for the phones you plan to use
6) Configure your switches interfaces to accept both the untagged Data trafic and the tagged voice traffic from your phones
7) Add the DHCP option 150 to the DHCP scope of your Voice VLAN to tell teh phones where the TFTP for its config files are
8) Set up your Call processor (router) with the needed ephone / ephone-dns
9) Set up the ephones with the lines / buttons for your users phones
