Upgrading Exchange 2000 IM to Office Communication Server 2007.
Is there a way to migrate straight to OCS 2007 or do I have to migrate IM from ex 2000 to Live Communication Server 2003, then LCS 2005 then OCS 2007?

There is no easy migration path so you'll need to go through the mutli-step approach you refer to.

I don’t know about migration, so I really can’t say. What we did was just to install OCS then go in and enable accounts on the new server. We really did not do any kind of migration. We only have a couple dozen on the OCS server right now and they went and downloaded the client from a share on that server. We have not yet begun to plan a full-scalle change over to OCS yet. I will be interested to hear what others have done.
