Adding Linux as a second domain controller
As far as I know there is no way to use a Linux server as a Windows Domain Controller. Active Directory is a Microsoft specific product and requires Windows Servers to function as the domain controllers. You can use Linux servers as the DNS servers, DHCP servers, web servers, etc but not the domain controllers.

moving exchange server off of SBS to separate box
I expect you have made this move already, but basically you build a stand alone exchange server, creating new storage groups and mail stores, and then use the move mailbox feature in Exchange to move users to the new mail server.

Can 2 dsl units be connected through separate switches and 2 NIC’s work?
If you want to use the 2 seperate dsl units for two seperate networks that will work. For the same network you would need to find hardware that will let you bridge both connections. If you are looking for more bandwith then you should just get a faster Internet line.
