does data's "mission critical" status give you pause in moving over? - Absolutely. But that said, moving to the cloud is not simply a technical decision. Its a business decision. Technically, the move to the cloud is easy. Pick a fairly reliable vendor, put in SLA requirements and test out the...

How do I protect a citrix environment when connected to an end point/PC that is infected with viruses.

You should protect your Citrix environment the same way you protect any end client device on your network. Although it is very unlikely that an infected client using a Citrix session could directly infect the Citrix server, it is possible that the Citrix server may have a vulnerability that needs...

Migrating to virtualized environment purely to retain support for legacy software

Absolutely I would consider moving old as hell servers into a VM to keep the status quo a good reason to do so (and I have done so in the past). I've moved machines that were getting close to 10 years old running Windows NT 4 and SQL 6.5 into a VM so they would run for ever after enough fans in...

VMware ESXi backup solutions

There are various backup players that work with VMware. You can look at Vizioncore's vRanger Pro and ESXPress. You can also integrate it with your existing backup software like Netbackup or Legato. Both products are reliable.

Were your cost savings post-virtualization what you expected them to be?

Virtualization does save money. A fast ROI and low future maintenance costs really make virtualization worth while. There are no technical shortcomings outside of putting more eggs in one basket which Vmotion addresses.
