Spam prevention Questions

Spam downloading from gmail since transferring to Windows 7 and (reluctantly) to WLM
I use Gmail, and have always been very happy with it. Moved to Win7, so had to change from OE, to WLM. Now all spam comes into my in-box, this never happened with OE – Gmail hid it. Help, please?

Scanning outbound emails
We have been compromised and one email account is internally sending out a lot of spam. We shut it down and another machine popped up infected and doing the same thing. How can we scan all out bound emails for spam just like incoming email? We use a barracuda 300 spam firewall.

Spam
One of our users is receiving endless spam. From: always has a name (which changes with each new spam message) followed by our users email address. eg Corrie Smith <mailto: tomjones@mycompany.xyz>. The next spam message will be from Jack Jones <mailto: tomjones@mycompany.xyz>. And so on. How do I block these numerous spam messages.
