Check out the <a href=”http://www.powergui.org/index.jspa”>PowerGui</a> utility for Powershell scripting. You will need the Exchange Server management pack installed on your client but you can use this to generate some very nice reports from AD/Exchange, etc.

Yes, very well possible, legally and corporate wide. An SLA is something that plays a major role. then there is a contract signed by both parties binding them into confidentiality and safety/security of corporate information. in this case the total control is with the 3rd party, not only network administrator but servers, routers, mails etc.
