Question, are the older emails contained in subfolders or the root of the deleted items folder? There is a box in the retention policy rules to include sub-folders. If this is not checked the subfolders will be ignored. Also have you checked your deleted items retention time?

Did you install the Exchange 2007 in its own domain? If so you will need to create a trust between forests (domain A and domain B). Once the trust is established you can use the Migration Tool on the 2007 Exchange to migrate those mailboxes. Associated userid will be created on the new LAN side.

not exactly sure what you mean by “a corrupted profile on the network”. Do you mean his user account was corrupted? If the mailbox is unable to be reconnected, it probably means it is still attached to the old user account. Only deleted mailboxes may be reconnected (recovered).
You’d be better off changing his password and logging into his mailbox via Webmail and setting an out of office.
