Former Employee can still send and receive e-mail on iPhone 4 after account was disabled
Make sure you have chosen to delete the mailbox, that will set it to disconnected on Exchange with a 30 wait until it is purged.

If you are running a mail filtering program like Trend Micro, make sure the user is added to the Directory Management list- Trend’s Term. It is a list of approved mailboxes within your Network that can recieve mail from external sources.
