When I quit Entourage, a box appears saying "Deleting Items" - I am wondering what it is deleting?

Filing email when sending in Entourage 2008
In Entourage 2004, I was able to designate where an email was to be filed right from the bar on top. In Entourage 2008, it seems that I will have to go to the drop down menu to move file that I am sending to a folder. Is that correct?Is there a simple way to designate where a file should be stored...

How would I edit an email while using a different color and not have to change it each time I move to a new section of the document. Is this possible? A function of entourage email?
