Hi,

Is it worthwhile to schedule optimisation job (update stats and rebuild index) on another server so it can be run on a database that was created on SQL Server 2005 Express from an application installation?

I know it is probably a good idea to atleast change the autogrowth setting from 1MB but what about the weekly database optimisation jobs?

Yes. That or use the Windows task scheduler on the server running the SQL Express instance to run the maintenance.
