 Can I see who deleted Windows Server 2003 shared files without object access?
someone deleted files from my windows 2003 share folder i dont have object access auditing enabled can i still know who deleted the files ?

I've never seen a way to tell who deleted anything from a share. It's always just vanished into the bit bucket. :( There is no setting or built-in way I know of in any version of Windows to tell you this. I've definitely been asked this question by very disgruntled users many times! :)

Without auditing software you are indeed out of luck, sorry. Once you buy and install auditing software you will be able to tell from that point forward, but not going back before install.
