Should we run gigabit to the desktop for computers transferring files (sub 500 MB) and accessing the Internet and MS Office 2010. It is severely more expensive would we gain speed or would it not be noticeable?

Always purchase the best cabling you can to support future network bandwidth requirements. Your switches are going to be replaced after 5 years or more at less cost than cabling. Most switches today will support GB to each port.
The most likely issue that your users are going to encounter is bandwidth capacity and latency to resources outside of your local network. That is where bandwidth and availability become expensive and may be difficult to provide.
Yes, you would notice improvements in the speed. since the transmission delay will be reduced. the higher the speed the lesser the delay, the smaller the packet size the lesser the delay.
Of course, i have yet to see a 1Gb link saturated.
