Create a new login in the SQL Server, and give that login only the rights needed for the access project to work. For example if everything is done via stored procedures only grant the login execute rights to the stored procedures. If it needs select and insert access but not update and delete access to a table, then only grant those specific rights.
Then setup the access database to connect to the SQL Server via that login.
I would assume that you are currently connecting to the database using an account which has dbo rights or sa rights on the server.
