We are using exchange2007. With Exch2000 we could run EXMerge to save the mailbox for users who left the company, then delete the account. Exchange 2007 does not have a ExMerge function. We are a small non-profit and do not have any Exchange training or budget and have found no simple solution to save, or archive, a terminated staff's mailbox so we could delete the online mailbox. The Exchange server has almost as many mailboxes for terminated staff as current staff. The Exchange scripting tools are so convoluted and complex that it is useless to us.
Is there a straightforward method or tool to offload a mailbox to a file so the account can be deleted and potentially restored?

I know this would work, but this is a tedious task for just exporting one single email.
What I or other frustrated users are looking for is third party software to be able to do it easily, like Exmerge in 2003.
I do not know what you find to be so hard with using PowerShell commands. you will be using what is basically a one line command:
not real hard to do.
In cases where PowerShell may not be available (pre-2007), you can simply add the mailbox to your Outlook mailboxes, then export the mailbox from there. No need to worry about what the password is since you changed it when the former employee was walking out the door, so you know what it is, so you could even set up a new profile in Outlook for that mailbox, should you wish.
