Safest way to migrate the email away from pop3 and into Exchange 2003?

I have a small business 2003 server that is currently using pop3 connectors to grab email every 15 minutes from an old email server in the same small network. I'd like to handle the email 100% on the 2003 server though, what would be the safest way to migrate the email away from pop3 and into Exchange 2003? Currently everyone uses outlook 2003+. I was thinking I'd try just swapping the ip addresses so I wouldn't have to change anything DNSish but that seems too easy to work correctly.

Hi,
Actually it’s very simple.
All you need is edit your DNS records to make sure your SBS external IP has the lowest preference.
Say your old POP3 preference 10 and your SBS is 11 or maybe 20, or perhaps you’ve not added it at all.
Simply edit your external DNS records to something like SBS external IP 10, POP3 server 20.
That’s it, all e-mails get delivered to your SBS.
One more thing though, does your SBS successfully send e-mail.
Just wanted to be sure that your SMTP connector is up and running. If it does, everything will work perfectly.

    Hello I guess you may use the wizard provided by SBS, just right click the user in the server manager and choose Exchange operations where you can choose to move an user to another server. Let me know if this works
