To restore everything precisely the way it was at some particular point, create an image of the drive on CDs, using Norton Ghost or other imaging utilities. U can also use NTBackup for backing up the everything!

There is no automated Inbuilt System Restore functionality in windows 2003. it is done via NTbackup System State Backup which is essentially the same thing, just not automated unless you create a schedule for it to do so.
So unless you have been creating regular System State Backups you cant roll it back.
