As far as using Outlook to export you can export each subfolder you want individually, but Outlook does not allow you to select multiple subfolders for one export. You have to export them one at a time. If you select one and then choose the "filter" button on the "Advanced" tab you can select a time frame. For instance for "field" select Date Time fields, then select "received". Then for condition you can select "between" and then choose your dates.
