we just installed SBS2003 with exchange and now all the Outlooks only displays TEXT emails instead of the HTML emails with links and pics. How can we change this so that HTML emails are not converted to text only?

What version of outlook?

You should be able to configure this by playing with the options of outlook. Tools>Options>depending on what version the tabs might be different, so search around in here. There should be a setting for HTML, Plain Text, and you can choose which is the default.
