what would cause a sudden trying to connect to exchange server message when outlook is opened?

There can be any number of causes. If the server is up and all stores mounted then find out if anyone else is having the problem. If they are you need to look at network connectivity between the clients and the server. If noone else is experiencing problems it is isolated to just the one user. Troubleshoot the machine. Can they access web pages?
