What is teh best way to configure 2 nic cards in exchange server 2007 so they have 2 different ip addresses and dont cause any issues?

If you are using two NICs in a Server then make sure that both NICs are in different subnets, you have certain limiations concerned to default gateway. You cannot have two default gateways in a Server even for two different NICs. In order to over come this you can use a route add command to add the subnet . Just do some google for route add command you will find lot of details.
