You would implement vlans for security reasons, or if you are daisy chaining a phone and a pc and you have a voip netowork. Configuring a vlan on a switch has many different options and you should read up on it.

VLANs basically allow you to segregate network traffic based on groups, function, data type, etc.. As mentioned, you can put all your data on one “private network” and keep it completely separate from your “voice network” all on the same cables/devices..
