Thanks. We'll let you know when a new response is added.

Install your Exchange 2003 server as a second server in the same Exchange Administrative Group, then you should be able to move the mailboxes quite easily between them.

Be sure to use the User move from the 2003 server (as long as both exchange servers are running while users open their outlook, they will automatically reconfigure). Also if you want to migrate your AD users to the new 2003 server, then do a dcpromo and move all the FSMO roles to the new server. When all is done turn off the old server (in case anything goes wrong). When things has been in order for a period of time of your choice, decommision the old 2000 server by first uninstalling exchange (to take the ad objects out the right way), then run dcpromo to take it out of AD (if that's what you want (or keep it as backup)).

Another good resource from MSExchange is the Step-by-Step guide for migration from 2000 to 2003. http://www.msexchange.org/tutorials/Migrating-Exchange2000-Exchange-2003-Hardware.html This is one of the better migration plans and will provide links to other resources.
