Answer Wiki:
Build a new SQL Server 2005 Cluster and recommission the old SQL Server 2000 cluster once migration is complete, This gives you the simplest migration strategy called 'running in parallel'. However with SQL Server 2005 you have High Availability technologies such as Database Mirroring so you can examine whether you need to setup an expensive and difficult clustering at all!
