In general, the CPU should be of the generation/family, with the same features. If they are not, you can actually leverage a new feature in Windows Server 2008 R2 Hyper-V called Processor Compatibility, which allows the migration of VMs from servers with any CPU, as long as they are the same vendor (Intel to Intel, AMD to AMD). That can be done on a per VM basis.
